Awaze Tibs (Ethiopian Beef Stir fry)

Ethiopian awaze tibs is a spicy Ethiopian stir-fry dish of cubed or sliced beef or lamb coated in piquant awaze sauce that features berbere seasoning, loaded with rich and bold flavors.

How to make Awaze Tibs:

First, prepare the Awaze in a small bowl and set aside.

In a large pan cook the beef cubes and season with salt, pepper and berbere. Cook until browned.

Remove beef from the pan and set aside.

Add Niter Kibbeh, onion, peppers, garlic, ginger and rosemary to the pan. Sauté for a few minutes. Then add the Awaze and stir to coat the veggies well.

Add the beef back in and sauté for 10 minutes. Voila! It’s done.

What is Awaze Tibs?

Most similar to a stir-fry, but also sometimes referred to as a stew. Awaze Tibs is a spicy and saucy dish. Tibs refers to the cooking method, specifically sautéing small pieces of meat with vegetables. Awaze refers to the spicy sauce, where berbere seasoning is the primary flavor component. If you love spicy cuisine, you’re going to love Awaze Tibs.

What is Berbere?

Central to Ethiopian cuisine is Berbere, a fiery hot and fragrant spice blend loaded with flavor. It is made with green cardamom, fenugreek seeds, cumin, ginger, chills, paprika, and more… Berbere means hot in Amharic. And indeed it is! I sprinkle this on my eggs and veggies at home. I purchased a large container of Berbere at a local Ethiopian market.

Awaze Tibs (Ethiopian beef tibs) is a spicy Ethiopian stir-fry that is healthy, rich in flavor and can be made in just 30 minutes!

Ingredients

  • 1.5 lbs of beef (bite-sized pieces)

  • 1 tsp berbere

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 cup of Niter Kibbeh

  • 1 red onion diced

  • 4 cloves of garlic

  • 1 piece of ginger

  • 1 Jalapeño pepper (or serrano)

  • 1 sprig of rosemary

  • 1 tomato diced

  • For Awaze sauce
  • 3 tbs of berbere

  • 1 tsp black pepper

  • 1/2 tsp salt

  • 1/2 tsp cumin

  • 1/4 cup of water

  • 1 tbs olive oil

Directions

  • Make Awaze sauce
  • Add ¼ cup of water and 1 tbsp of olive oil and mix till it forms a paste. Set aside.
    (1 tbsp olive oil, ¼ cup water)
  • In a small bowl, add spices. (3 tbsp berbere, 1 tsp black pepper, ½ tsp cumin, ½ tsp salt)
  • Make Beef Tibs
  • In a large skillet, add the olive oil and the chopped beef. (1.5 lbs beef)
  • Add salt, black pepper, and berbere to the beef.
    (½ tsp black pepper, ½ tsp salt, 1 tsp berbere)
  • Stir for a few minutes on medium heat till it is browned.
  • Take out the beef and set aside.
  • Melt niter kibbeh in a skillet, then add the chopped onion, garlic, ginger, rosemary and jalapeno peppers 
    (1 onion, 4 cloves garlic, piece of ginger, rosemary,  2 jalapeno peppers)
  • Saute for a few minutes. Then add the Awaze sauce and simmer for 2 minutes. 
  • Add the browned beef and diced tomato and cook on low for 10 minutes. Stir often.
  • Add the lime juice, stir and serve hot!

Notes

  • Dish is spicy, Omit the pepper for less of a kick.
  • In the absence of flavor-rich spiced butter (or niter kibbeh), you can use unsalted butter instead or oil.. You might have to add a bit more spices to taste.
  • If you want dish saucier, add more water to Awaze mixture.
